I have been unemployed since mid august 2021. do I put down my old occupation or do I put down unemployed?

The IRS does not use "occupation" for anything that will affect your tax return. Occupation is used for statistical purposes, so you can put whatever you want.

Normal occupation is best. If you change careers, change the occupation.
