I am having to prove I filed my 2016 State Taxes to the State of Alabama. Which Tax forms do I need to print and send?

If you have a PDF file then print the forms and schedules but not the worksheets.  If there is a sheet labeled "Electronic Postmark - Certification of Electronic Filing" then send that too and make sure to ink sign the return and attach all W-2 forms + anything that has state withholding on it.
