I made less than $350 doing Doordash in the month of November 2021. I did not receive a W-2, 1099-NEC or 1099-MISC. Do I have to claim this amount? If so, how do I claim? I do not plan to do it again.

Because your revenue from Doordash was less than $600 they were not required to send you a 1099-NEC. You are still required to report all of your income. You will not owe self-employment income tax since it is less than $400. You can report it as Miscellaneous income. To do so,
Select Federal Taxes, Wages & Income, I'll Choose What to Work On
Scroll to Less Common Income, and select Miscellaneous Income, 1099-A, 1099-C
Select Other Income not already reported on For W-2 or for 1099
Select Yes
