The only way to bypass the huge Turbotax updates is to turn off your internet before you start the program. However, I don't know if the program will then be able to recognize the internet to be able to transmit a return. You can try it.
You really should update the program right before you e-file, just in case something affects your return, and depending on what version you currently have, you might not be able to e-file without updating.
However, after you e-file, just stop using the program. Use the IRS website and your state website to track your refunds instead of launching the program. Turbotax updates about once a week in peak season. In May or June, run the program one more time so you get all the updates rolled into one so you have a fully updated program in case you need to amend later.
Also, if you bought the download instead of the CD, the download file on the server is always kept up to date. You may be able to download the current installer to a flash drive at a library or other internet location, then use the flash drive to install it on your computer at home.

I am being audited by our state DOR. I need to get into my 2019 return, but I don't want any changes made to the way I filed my taxes. I can't get past the "updater" when starting up the program and I don't want to risk any possible changes to the way I filed my return.
I tried disconnecting the internet to bypass the "updater" on start up, but the program will not allow me get past the update. It returned a message that the update failed and I can't get past that screen. This seems ridiculous to me. Sounds like "government" bureaucrats at work to me
You've got a problem. Turbotax will require several updates over the internet before you can file.
Use Turbotax Online over your browser. It is always uptodate.
Or, one of the other free online federal filing options.

always make a paper copy of your filed tax return, to protect yourself against TurboTax update changing your return after you file.
Disconnecting the internet didn't work with TT 2020.
It first tells me that I have to be connected to the internet to install the update (good), but clicking Cancel or closing the warning pop-up simply exits without starting TT. If I click the Continue with update option, the update fails, and nothing I do at that point starts TT, even though it displays the message "Restarting TurboTax".
Grrrr! I need to access my 2020 tax return to calculate my estimated tax payment, due in two days.
I'm running TurboTax 2020 Deluxe on the latest version of Windows 10.
If the automatic update isn't working, you can try to do a manual update.

Doing a manual update DID NOT WORK. After installing the manual update, starting TT 2020 caused to again tell me it needed to install the latest updates.
I even tried rebooting my system fallowing the manual update, to make sure the registers was up-to-date. Same result.
The only thing that worked was uninstalling and reinstalling TT 2020 from my DVD. After doing that TT installed the latest updates (it took longer than usual) and started without any problems.
