If a bank is collecting money from external accounts and depositing it into my account, shouldn't I receive a 1099-K from the bank.

Perhaps not. 1099-Ks are issued by “third party settlement organizations.” As per the IRS, a third party settlement organization is the central organization that has the contractual obligation to make payments to participating payees (generally, a merchant or business) of third party network transactions. An example could include apps used to handle the money transfer between buyers and sellers. Thus, it is not clear whether your bank is a third-party settlement organization.
However, while they may not issue a 1099-K, they could issue a 1099-Misc, or 1099-NEC, depending on how your bank characterizes the money they deposit into your account. Whether the bank issues a 1099 or not, if the amounts you have received are income to you, then you need to report the income on your return.
