When filling out form 2441 for my Child & Dependent Care Expenses I chose "Person" instead of "Organization," and I can now not go back to fix this. How do I go back?

Go to the Deductions and Credits section in TurboTax. Choose You and Your family from the list and then Child and Dependent Care Credit. Update that section.

When you edit the provider, you will see an option to enter an employer identification number. Once you click on that, you will see the option to enter the name of the organization as opposed to an individual's name.
