Itemize vs Standard Deduction

If I don't make enough to get a tax refund other than the earned income credit, would it make a difference if I itemize?

No.  Your itemized deductions would have to be greater than your standard deduction for your filing status  to have any tax benefit.

So if you do not have any tax liability due to your income there is no reason to itemize.
