To check TurboTax's analysis of which standard deduction is the better option for you, go to the Deduction and Credits summary and at the bottom of that screen click continue. You may need to answer a few questions, but you eventually should see a screen where TurboTax tells what deduction is "right for you". In that same screen, you can manually change what deduction method you would like to use.
Additionally, if your mortgage interest is not showing in your total itemized deductions amount, go back to the mortgage interest deduction section and ensure all your mortgage interest information is entered correctly and that all answers in that section are properly answered.
Also consider going to the "Federal Review" section on the left to have TurboTax review the Federal section for any unanswered or missing items that are needed. This may help identify and missing pieces that are needed for your mortgage interest to populate properly on your return.
