Do I have to exclude my foreign earned income from my U.S. taxes if I qualify to do so? Honestly not sure the headache of trying to exclude it is worth it.

No, a qualifying individual with qualifying income may elect to exclude foreign earned income, but you aren't required to exclude it. But it's usually worth it, because you can exclude up to $100,800 per qualifying person from federal income tax.
