I have applied for an ITIN for my wife since this is the first year we're filing jointly, however, it's been over 3 months since I mailed my federal tax return and the IRS still has no indication that they have received the application and are processing it. What should I do if my wife still does not have an ITIN when the deadline to file the California state tax return in October comes? Would it be possible if I redo my taxes to single filing so I can e-file for both federal and state, then claim the refund next year when she has her ITIN?

@john699 , if the ITIN has not been issued ( nor refused ) by the Oct deadline for state of CA, then I suggest that you prepare the state return using dummy SSN/ITIN, print, then snopake the dummy tax id, hand write in NRA ( just as you did on the federal return ) and then mail this state return along with a copy of the federal return including a note explaining that you have applied for ITIN for you wife ( whom is a resident of CA ) and are awaiting IRS decision. Thereafter ( or now ) call the CA franchise tax board and discuss this situation with them.
Don't worry, it will work
Stay safe
