IRS and State returns for state of Georgia residents is not due until 5/1/2025. How do I change the payment date in Turbotax to 5/1 and still file my returns today?

You can't - You can pay past 04/15 (up to a year in advance) at the IRS Payments site. For Georgia, see the GA-DOR.
