What do I enter under employment category if I am retired

none of the employment choices apply to me. I don't own a business, I don't have a job, Im not self employed, etc

Do you mean for "occupation?" Use "Retired" if you want to. The IRS does not use occupation for anything that affects your tax due or refund. They only use it for statistics.
