Unfortunately, both my parents died of Covid last year. Can I claim them as my dependent? If so, should I include their social security and pension as income on mine?

Sorry for your loss.  Sorry you can't claim them if they had more than 4,300 of pension income for the year.  Their income only goes on their return.  You might need to file a Joint return for them.

Thanks for your response, but what if their pension income was less than 4300?

see IRS Pub 501 for who can be a dependent on your tax return.

Regardless, you would not include another's income on your own tax return unless you are paying the kiddie tax.
