I have many W-2Gs to enter from the same payer. How do I quickly copy a W-2G to start another, since almost every box is the same except dollar amounts?

You can just up those W-2g amounts and make one entry in Turbotax.

I have several CD's with the same bank, and they send me separate 1099-INT forms for each one each year. I've always just entered the total.

The W-2G entry screens are for your benefit only...you can simply skip that entry section and enter the total only on the next screen.
