Made an IRA contribution on April 15 in my time zone (CST), but it was after midnight EST. My brokerage, Fidelity, says it is a contribution for 2019. Can this be fixed?

No. You made the contribribution after midnight on the 15th. You also have to take into consideration what the brokerage house has to do on their end to get it done.
