With education deductions, it says I can deduct books, supplies, and equipment required to enter the class. Can I write my guitar off if its required for a class?

I'm an AFA Music Major, and guitar is my instrumental major of choice. In order to attend the school Jazz Band and the guitar class, both of which give me credit, I am required to have a guitar. Would I be able to deduct the cost of the guitar since I needed it for classes?

Yes.  You can deduct the cost of your music instrument if it is required for the class.
