Old Student Loan Credits

I'm an idiot and didn't understand how to add student loan interest statements or 1098-Es to my tax returns in the past.  I understand I can still file for those credits for a couple of years by amending my returns so my question is, how do I do this?  What forms do I use, where do I get them and how many years back can I go?
