Can you "turn off" a Schedule C or Schedule E so you can easily quantify the impact of individual businesses on your overall tax?

No, unfortunately, you can't. The only thing you could do would be to delete the business or rental but that leaves you a lot of work to re-enter the information.

If you were in the Download/CD version, you could make a duplicate and then delete items.
