I files my taxes and got rejected via e-file because the IRS could not match my wife’s DOB with the Social Security Administration’s record, but I filed with an ITIN number. They are instructing me to call SSA, but they they handle DOB records for ITIN numbers? Or is my only option to file by mail now?

You can try calling the Social Security Administration, but ITINs are issued by the IRS, so it's very unlikely that SSA can help.
If you entered your wife's date of birth correctly and it doesn't match up with the IRS' database, you'll need to paper-file your return.
