Why does it say 21 days after it was accepted then? My amendment was already accepted.

Turbo Tax tells everyone 21 days.  It's just an estimated date.  But usually that is only for the original return.   Did you wait to amend until your original return was done processing and you got the first refund or paid the tax due?    Check the IRS

I already paid the tax due and then I amended my return on May first it said it was accepted and should take 21 days but I don’t see anything.

It will take the IRS at least 20 weeks to process an amended tax return, Form 1040-X, or longer.

A federal return that's been 'accepted' means it has passed an initial screening, which includes some basic checks. Once it has entered this phase, its status will remain the same until it has been “Approved.” This would mean it has been processed and that the IRS has approved the release of your refund.
