I mailed out my returns last week but my status still says "ready to mail." Is there a way I can find out if the returns made it on time?

Since you filed by mail, we don't have a way to verify the status of your return (other than calling the IRS and asking them). The important thing is that since you mailed your return last week, the return will be postmarked with a date that shows you filed before the deadline.
