I had to amend my return to receive the 3rd stimulus and I had to amend both state and federal it seemed. It says I have to send in my state one by mail. Since it's shows it's amended online, do I have to send that in to my state now even if I don't need it amended?

None of the states issue stimulus checks based on the Federal distribution of the checks; therefore, if the stimulus is the only reason you issued an amended return, you do not have to file an additional amended state return.
You should confirm that the amended state return does not have any adjustment from the original return.
I still am a little confused and have decided to not amend my taxes now. I have tried to cancel them on TurboTax but it is still showing they were amended. If I don't send anything by mail will my taxes not be filed now?
If you needed to send the amended state return in by mail, and if you don't mail it, the state return will NOT have been amended, even if your TurboTax says it was.
Below is a link which might help you "undo" the amended state return in TurboTax.
