Hi, My father passed in 2017. We filed tax returns for 2017. But some 1099-r and a K1 have come for 2018. How do I deal with these?

These have my dad's SS but they are also in both his name and the trust. Can I just file them under my mom's 2018 return?

Yes, you should just file them on your mothers return. Do not file a 2018 tax return for your father!
