Will info be used, like direct deposit info, from an accepted return or does it have to be processed

Unless it has been processed, your banking information has not yet been entered into the system.

So, "being processed" doesn't count? It's been a week since filing...everyone is being encouraged to file 2019 at this time and add bank info, so why is that if the actual processing takes so long and doesn't count toward direct deposit info for stimulus payments

Accepted only means you had enough data to get it into the system.  The IRS is working as fast as it can to process returns and now they are dealing with the added enormous task of sending out the stimulus payments.  Your patience will be needed.
