My wife and I bought a home in California and the loan is only under her name, but the deed is under both our names. If she goes part time and doesn't make nearly enough to deduct the full interest and taxes on the mortgage, would i be able to use the income tax I paid to make sure we deduct the full amount? We always file married jointly.

Filing jointly solves all of these potential problems.
For tax purposes, all of your income and deductions are lumped together, regardless of who earns what.
