2021 tax input not being taken by TurboTax

It should be. What are you trying to enter? But there will be many updates to come. The IRS hasn't even finalized all the forms yet.

Will not accept edits to W2. Says interest data not ready for input.

this link provides dates it's estimated forms will be ready for Federal purposes. However, Turbotax and all other tax programs are dependent on the date the IRS gives approval to them.

What? Interest doesn't have anything to do with W2. You can't import any 1099 yet. It's too early. Wait until late January or probably late February. You can't efile until late Jan or February anyway. So there's no hurry.
