We have 3 kids together, unmarried, but we all live together and I wanted to know can I claim 2 of my kids and can my fiance who is their father claim 1 child?

Yes, since you live together and you are both the biological parents of all children you can agree on who will claim each child. This is assuming that you meet the other requirements for claiming the children.
