I run DD AND Uber at the same time when I go out. As far as mileage deductions on taxes, am I allowed to combine the mileage for both apps or just use one. For instance, if I drive 10,000 miles while doing both platforms, can I then claim 20,000 miles because I am using both platforms? Thanks

No. You can only claim the actual business miles, in your example, 10,000 miles.
Door Dash and Uber are both ride-sharing, and you can combine your activity (income and expenses) on both platforms into one Schedule C, and claim mileage for both platforms on that Schedule C..
You can list the income from both jobs on one schedule C (maybe called "Rideshare") since it is all essentially the same business with the same kinds of expenses. However, you can only list your actual expenses. You can't double-dip by claiming mileage twice, even if both apps list it.
