I was living in Texas, US from Jan 2021 to Oct 2021. As per my understanding I'm considered as a resident alien for 2021 tax filing status. Based on my understanding, I need to file the 1040 as I filed for previous years. Does my tax filing change in any way given I didn't live in the US for Nov and Dec 2021. Do I need to factor in other aspects in this year's filing?

If you meet the Substance presence test for tax year 2021, then you are considered a U.S. resident for tax purposes and you can file form 1040 for your tax return.
Your absence from the U.S. in November and December 2021 should not affect your substantial presence status but you should do the test to make sure.

Yes, I meet the substance presence test for 2021 year. Can I just use the turbo tax product to file my taxes given I need to file 1040. I found out that turbotax doesn't allow filing for 1040NR, which anyways I don't need to file for 2021.
Yes, you can use TurboTax for tax year 2021.
And you are correct, TurboTax does not support form 1040-NR. Non-residents should use Sprintax..
