Starting from scratch will delete all my history?

No, starting from scratch will not delete your history such as previously filed tax returns. It only deletes the information you've entered for the return you are working on.

If you have not yet paid for the product and you use "Clear & Start Over" under Tax Tools to start from scratch, it will delete only the information you've entered for the return you are working on. It will keep your personal information but you will have an opportunity to review it and make edits and enter your information again. If by "history" you mean any other previously prepared tax returns, no, starting over will not delete those tax returns.
