when I add my child and 'head of household's won't let me file my amended taxes electronically

What is the error you are getting?

I get this message:

Form 1040-X: This return FS : Form 1040-X cannot be filed electronically if there is a change in filing status.

And have to select an option 'Amend head of household FS'

thinking I need to go in and change the way I get my return from auto-deposit to paper check. Thanks for your help.

You can switch from e-file to file by mail by following the steps in the below TurboTax Help Article.
