On our 2023 return, TurboTax asks about occupations. My wife is now a full time student as of August 2024 but wasn’t a student in 2023. Should I list her as a student or enter in her occupation in 2023?

The IRS only uses "occupation" for statistical purposes; the occupation you enter has no effect at all on your refund or tax due. Since you are preparing a 2023 return, it would make sense to use the occupation she had in 2023, but it will not really matter.
