I purchased PLUS last year. Do I need to purchase it every year when I file? What happens to the documents that I had while on PLUS if I don't purchase it this year?

You will need to purchase Plus each year if you don't print out your return and you need to see it, (each year you will need to find your AGI) and if you do not purchase a program each new year.

Your documents will always be in your account whether you purchase products that allow you access to them or not.

No.  If you want PLUS each year you have to actively select and purchase it again.  Online TurboTax has no recurring fees or automatic renewal.   2018 PLUS provides access to your returns through October 31, 2020.    If you use a paid product each year (PLUS or higher),  you will maintain continued access to your returns.   Of course, you can archive your own copies as well and always have your own access.

The only TurboTax product that has an optional subscription is the TurboTax Advantage program for desktop software users (CD/download).
