I have 3 kids and my wife is not working how many dependents should I claim on my paycheck and how do I file my taxes this year?

You're filing status should be Married Filing Joint, and it flat out does not matter that only one of you had income. Since a married person can not be claimed as a dependent on any return, that would mean you can only claim your kids, and only if you and/or your wife supported them during the tax year being filed.
