How do I edit "full time student" status on my info summary?

You can't edit anything on a summary screen. Any screen that has the word "summary" on it, is view only on that specific and explicit screen. (Some summary screens have an EDIT button on them that will take you to where you need to go to change data.)

Now under the "My Info" tab you can elect to edit your personal information and just work it through, making any changes as necessary.

can I change the "occupation" after I printed out the tax return paperwork ?

No relevant reason to bother. The IRS does not use "occupation" in any way that affects your refund or tax due. "Occupation" is only used for statistical purposes. If you just really want to change it, then cross out what you entered and write the occupation you want by hand before you mail it in.
