I want to print my returns but I do not see my e-signature and date. does that appear after I transmit my returns?

No. It will be blank where it says "Sign here" when you print out the return. If you have some sort of situation where you are asked for a signed copy, then you take out a pen and sign it.

Trying to efile tax return, tried since yesterday, simple return, keeps telling me come back and transmit later. Is it just site so busy ahead of deadline today?
