My son is required to file the 2023 tax because he has 1099 NEC and wages income over 3,000. I will be claiming as a dependent in my tax return. Can I still claim his interest income in my tax return instead of him claiming it in his? Thank you!

No.  If he has to file then all his income goes on his return.
