Can I claim my son as a dependent and claim head of household if he is 22, not a student, earned 11,000+ and lives at home?

No.   He is too old to be a qualified child if he was not a full-time student and he earned too much to be a qualified relative.  He cannot be claimed as anyone's dependent.  He cannot be your qualifying relative for HOH filing status at all.  If you do not have a qualified dependent you will need to use Single as your filing status.
