You just have to do the best you can, but you should keep a log.

i did, but it got deleted by accident and i have no way of recovering it. the tips i get vary wildly from day to day (sometimes i get $2, sometimes i get $50, sometimes it's somewhere in between) and i don't know how i'm supposed to figure out what i should put but i also don't want to just not report anything.

Since the information you had was deleted, you just need to come up with the best estimate you can and report that amount.
