The house I live in is going through probate, I will own it when probate closes. In the mean time I have paid the property taxes on it, can I deduct those payments on my tax return?

No, since you are not the legal owner yet.  The deceased person's Estate should be paying those property taxes in  the meantime, so you should seek reimbursement from the Estate.

When the deceased passes, you become the owner of the bequeathal.

Even if the county records don't show that yet.
