I completed a job in 2018 but was not paid until 2019. Can I still claim the income for 2018? If so, how? And also, can I choose which year to claim?

No, you do not choose in which year you claim your income. You claim income in the year you receive it. If you are not paid until 2019, then you report the income in 2019 (next year).
