My boyfriend and I purchased a home in 2021. but we are filing our taxes separately does it matter who I claim the mortgage interest form 1098 under? he makes the payments on the house but both of our names are on the mortgage loan

Only the person who made the payments is entitled to deduct the payments - interest & property tax.
If he makes the payments, then he gets to claim the interest. If you are not making the payments, then you cannot claim the interest.
In order to take the mortgage interest deduction you must be both liable for the payment (which you both are) and actually make the payment (which only he is), therefore he is the only one eligible to take the deduction.
