Do I actually need to go through the whole song and dance of itemizing my deductions on the self-employed version of TurboTax if I'm just going to take the standard deduction anyways?

don't waste your time. However, for some states, it may be advantageous. if you have a state income tax what state so you can be advised further.

 You don't need to  "go through the whole song and dance of itemizing", however, if your itemized deductions allowed for Oregon are more than the standard deduction amount, you can itemize your deductions on your Oregon return even if you take the standard deduction on the Federal.

No, if you know that your itemized deductions will not exceed your standard deduction you do not have "go through the whole song and dance of itemizing"

I assume you are referring to your personal deductions. You must still claim any business deductions on Schedule C.
