Why did I end up filing a 1040ez when I entered mortgage interest, taxes, charitable donations, and work expenses, and I said I did a 1040 last year?

I didn't receive any deductions for the above expenses.

If your did not have enough deductions to itemize, Turbo Tax would have selected the standard deduction for you. This would allow you to file a 1040 EZ.

All of your itemized deductions must be greater than your standard deduction for you to get a benefit on your tax return. The standard deduction amount is different depending on your filing status.

See the screenshot below for the standard deduction amounts.

If your itemized deductions are greater than your standard deduction, you will file a Schedule A and a Form 1040.

To see what the Turbo tax program has calculated as the best deduction for you, select Deductions and Credits and scroll down to the bottom of the page and click on Done With Deductions.
