I stayed in a hotel for a week prior to moving so that I could start working a new job. Can I deduct this as a moving expense or job expense?

The job was greater than 50 miles from my old home. Also, during the move, my whole family was in a hotel for another week after moving from one home before we could move in to our new home, can I deduct that week's hotel expense as well?

No. That is a personal living expense and it is not deductible.
You will find what is and is not deductible as a moving expense in IRS Pub. 521:
