I need a 1098 Mortgage Interest Statement from a company that no longer exists. Can I enter the property taxes I know were paid without the other 1098?

The form isn't on my IRS account online. I've tried to contact the company, they don't seem to exist anywhere anymore.

Yes, you can report/enter the property tax you paid regardless of whether you have a Form 1098 that shows the amount.  You can get a copy of your property tax bill from your county tax assessor or tax commissioner's website.  As for you mortgage interest, your 1098 may not show on your IRS account or transcript because it is only February 3.  It may take a while for it to be posted there.
