How do you calculate your Home Office Mortgage interest, Mortgage insurance and real estate tax from the Entire Home

You use a percentage of the total amounts for those expenses based on the size of the home office as a percentage of the size of the whole house.

For example, if the home office is 100 square feet and the whole house is 1000 square feet, then you would use 10% for the home office (100/1000). 

If you don't know the square feet, but your rooms are essentially the same size, then you can calculate it by the number of rooms in the house.
