Yes, you can deduct depreciation on the car you use for driving for Uber.

You can choose to use the standard mileage rate method or the actual expense method. If you use the standard rate, depreciation, insurance, gas, oil, maintenance are already included so you can't take it plus something for depreciation. About all you can add are tolls and parking. If you use the actual expense method, depreciation is a major component of the costs you claim.
