100% Remote Work

I work remotely (in SC) for a company based out of New York.  My employer has set up my home address as my "primary address" in my employee profile.  My office location address is in NY - however, I do not have a space at this office.  I am trying to determine whether I should be paying state income tax to NY.  My company hired me as 100% remote, per my offer letter and I will not be traveling to NY for work. Currently the payroll department is withholding for SC income taxes.

100% Remote Work

New York follows the "convenience of the employer" doctrine.  This means that if you're working remotely for the company's convenience, rather than your own, then your income is not subject to New York income tax.  Since you were hired specifically to work remotely, IMO your income is subject only to SC tax, and your payroll department is withholding correctly.  Tip: be sure to keep that offer letter with your records.
