The amount taken depends on your state's tax rates, your income, and your filing status.  If too much is withheld, you obtain a refund of the excess by filing your state tax return.

Do you get paystubs when your employer pays you?  The amount being withheld for state tax each time should be on your pay stubs.  When you receive your W-2 the amount withheld for the whole year for state tax will be in box 17.  You can file an state income tax return; if too much state tax was withheld, you will receive a refund.  If not enough state tax was withheld, you will owe tax to the state.
